We would like to share with you, our Tuscany , bring to you its traditions and hospitality and share with you the secrets of its Cuisine.

The cradle of the European Cuisine is Florence , thanks to Caterina de Medici who took with her ( when she married Henri of France) a brigade of Chefs to cook for her in Paris .

We have found many recipes from the time of the Medici and have revised them for the palate of today.

We choose the Tuscan Cuisine, why? Because it is healthy and easy on the digestion using fresh vegetables, seafood, poultry, organic beef and other meats such as Cinta Senese one of the original breed pigs of Medieval times. All, in all something for everyone’s taste.

We teach how to create a Menu and to organise your mode of work so to finish your preparations on time for when the guests arrive and show you many tricks of the trade, things you will not find in a cook book.

 

 

  

The Cooking School CHIANTICOOKING in Colle di Val d`Elsa (Between Florence & Siena) which is run by Joshi & Anita two passionate Chefs who with their expert guidance show you the secrets of Haute Cuisine.

As a beginner or advanced student, here you can learn in a pleasant atmosphere and an intimate circle (max. 8 per) how to create and cook a menu for your guests or your family.

We offer hands on, single day cooking classes, multiple days (a long weekend) or a week long culinary vacation.

Course I

 

Cooking classes for children (8-16 years)  Part 1. Four lectures.

The children cook their favourite dishes under guidance of Joshi.

 

Course II

 

Cooking classes for children (8-16 years)  Part 2 Four lectures.

Advanced course.

 

Course III

 

Basis cooking course: Five lectures.

Instruction in the basic knowledge of cooking, the basis of Haute Cuisine.

 

 

Course IV

 

International Cuisine for advanced students. Part 1 Five lectures.

 

         

An sample: Coq e vin, Cacciucco alla Livornese, Penne arrabbiata, Ribollito, Kaiserschmarrn etc.

 

Course V

 

Italian Cuisine especially Tuscan Cuisine Part 1 Five lectures.

 

Home made pasta with suitable sauces, fish, and meat dishes with seasonal vegetables. Traditional Tuscan dishes a heritage from many recipes that have been handed down from the grandmother.

 

Tuscan Cuisine. Part 2 Five lectures.

 

We dig out the recipes dating back to the Medici time in Florence back to the roots and the cradle of European Cuisine.

 

 Course VI

 

Fish: for advanced students. Five classes

Preparation of sweet water and salt water fish, filleting etc.  

 

 

 

Course VII

Menus for dinner parties: Four classes

 

How to prepare Haute Cuisine for a dinner party and spend time with your guests.

 

 

Course VIII

 

Themes: Soups, sauces, pasta, pates, soufflés, deep frying, desserts and various breads.

 

The courses run over a period of 4 – 5 weeks.

The recipes are in tradition with the seasons and all produce is fresh (not frozen) and when possible organic.

 

We also offer morning and afternoon cooking classes and a whole day cooking class with a visit to the Market (on Tuesday or Friday)

The cookery lessons begin in the morning with shopping at the local market, we prepare a three or four course Menu and after eat together.

Alternately available is a half days cooking lesson in the afternoon without shopping together.

The fee includes the food and house wine.
